Tornadoes
The weather in NC has been crazy! Intense thunder and lightning woke Derek and me up at 5am yesterday morning. My phone was blowing up with tornado warning messages from UNC’s alert system. Did we get up and hide in the bathroom? No. We said, “Wow, this is a terrible storm.” Then we rolled over and both fell back asleep. I realize how dumb it was to nonchalantly sleep through tornado warnings. Derek and I definitely should not go to the midwest for his residency. It probably wouldn’t go well for us.
Meal Planning
Anyway, I wanted to post my meal plan for this week:

I have a lot of delicious meals coming up this week. I’m excited that the weather is finally warm enough for grilling! I look forward to sharing the beef kabobs recipe with y’all. It’s actually my dad’s recipe, and it is my favorite meal when I go home. I also plan on sharing my attempt to make a healthier cobb salad. Finally, I will post about the chicken enchilada casserole recipe in honor of Cinco de Mayo. (By the way, Cinco de Mayo is NOT Mexico’s independence day, nor is it celebrated by most Mexicans. However, I am all for any excuse to eat Mexican food.)
My Last Night at the Clinic
Throughout graduate school I volunteered and later served as a volunteer coordinator at a free, student-run clinic. The clinic primarily serves people who are uninsured, low-income, and frequently undocumented. Social work students conduct brief assessments and provide resources for housing, employment, health and dental needs, mental health, substance use disorders, and anything else that patients were concerned about. It was a great experience, and it was bittersweet to leave for the last time. I am thankful for the opportunity to serve people in my local community, the hard work of the many students who volunteer to keep the clinic running, and the patients’ patience with long wait times and nervous students. I will miss it!
